    Potato leek soup is a long-standing favourite in our home. It is a simple recipe and is absolutely delicious. The recipe included is the original one that was passed down to me by my mom. I do make some changes to the soup recipe. To make this soup vegan: use oil instead of butter vegetable stock instead of chicken stock almond or soy milk (or just omit entirely and use a bit more stock in the cooking process) Kitchen Witchery I featured this potato leek soup recipe while chatting about kitchen witchery on my YouTube channel the other day.
