This beef stew recipe is simple and delicious. It is easy to make and packed full of flavour. Slow cook this stew in a dutch oven in a 325 degree oven and let time do the hard work.

There is nothing that compares to the flavours that can develop if you let something cook low and slow.

I have been trying to live a mindful, slow life, for a few years now and applying those principles to cooking really made a big difference.

My kitchen used to be filled with recipes from Rachael Ray. Her Big Orange book filled with 3o minute meals made my life easier – or so I thought. Nothing wrong with those recipes, but I was always rushing through life. If a recipe took more than 30 minutes I didn’t have time for it.

It was exhausting.

It took a few years, a few kids, and a lot of meditations later… but I have really learned to embrace the art of slow living.

Slow cooking food and taking the time to really connect with your ingredients makes the food taste better. It is totally a mental thing – but when you connect with the food you are making, as opposed to rushing through it, there is something special that happens.

I can’t explain it, I just feel it.

Beef Stew Recipe

I have been making beef stew for many years.

There is something about a hearty bowl of stew with some fresh baked bread that just fills you up. Not just your stomach, but your heart and soul as well.

I remember my mom making beef stew as a kid. I was not much of a beef eater but this stew was always so delicious.

My favourite part is actually the potatoes.

They absorb the flavours from the stew juices – the delicious tomato-y gravy. They are soft and so tasty.

Beef Stew – Simple and Delicious

This simple and delicious beef stew reminds me of home. It has the flavours of my mom's beef stew with my own special twist.

Ingredients
  

  • 1.5-2 lbs stewing beef
  • 2 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1/4 cup flour
  • 6 small potatoes
  • 1 small rutabaga
  • 4 medium carrots
  • 2 cans tomato soup
  • 6-8 cups bone broth (or beef stock)
  • salt and pepper
  • 2 bay leaves
  • 1 tbsp thyme
  • 1 tbsp oregano

Instructions
 

  • Over medium heat, add olive oil to your dutch oven and brown your strewing beef. Season with salt and pepper. Chop your vegetables into bite sized pieces while your meat cooks.
  • Once browned, add your onions and sautee until translucent.
    Add your garlic and cook until fragrant.
  • Add your flour and mix well. Allow the flour to absorb the fats in the pan and cook slightly – approximately 3-5 minutes.
  • Add approximately 4 cups of broth and, using wooden spoon, scrape the bottom of the dutch oven to deglaze and get all the yummy bits off the bottom. Add your vegetables, the tomato soup, remainder of broth, and your seasonings. Stir to combine.
  • Put on the lid and place in a preheated 325 degree oven for 6 hours.
  • Enjoy!
