Mushroom Soup: Wonderful Autumn Soup

Looking for a rich and satisfying autumn soup? Try this easy mushroom soup recipe. It is easy to make and full of delicious mushroom flavour.

Mushroom soup is one of our favourite soups to make and eat in the fall.

It is rich and filling. Plus, who doesn’t love a warm soup or stew on a chilly autumn day? When the weather turns cold, we love to cook all sorts of delicious soup recipes and homemade bread to go along with it.

What kind of mushrooms do you love?

I tend to use white button mushrooms or cremini mushrooms. If you have a favourite kind, feel free to use whatever varieties you enjoy!

I have also heard that roasting mushrooms before making the soup takes it to another level of deliciousness – let me know if you try it!

Mushroom Soup

This wonderful autumn soup is rich and filled with delicious mushrooms.

Cook Time 45 minutes

Ingredients
  

  • 3 tbsp olive oil you can use 1 tbsp butter and 2 tbsp oil if you prefer
  • 2 diced carrots
  • 2 ribs diced celery
  • 1 medium onion
  • 1 tsp fresh thyme
  • 2 pounds mushroom
  • 6 cups vegetable or chicken stock
  • 1 clove garlic
  • 1/4 cup flour
  • 1/2 cup heavy cream
  • salt and pepper to taste

Instructions
 

  • Heat oil over medium heat. Sautee onions, carrot and celery until tender (but not browned).
  • Stir in mushrooms and sautee until soft (about 5 minutes). Add garlic and stir until fragrant (approximated 1 minute).
  • Add flour and stir until slightly golden in colour.
  • Add stock, thyme, salt and pepper. Scrape any browned bits from the bottom of the pot.
  • Cover and simmer for 30 minutes. Remove from heat, stir in heavy cream. Serve and enjoy.

Enjoy Your Soup

There are so many ways to adjust this soup to your liking. Instead of using all oil, feel free to use some butter as well.

Don’t have cream? Try using sour cream! (Just don’t boil the soup after adding sour cream!) You can also make this soup dairy-free by using just oil (no butter) and leaving out the cream or using almond milk instead.
