Potato leek soup is a long-standing favourite in our home. It is a simple recipe and is absolutely delicious.

The recipe included is the original one that was passed down to me by my mom.

I do make some changes to the soup recipe.

To make this soup vegan:

  • use oil instead of butter
  • vegetable stock instead of chicken stock
  • almond or soy milk (or just omit entirely and use a bit more stock in the cooking process)

Potato Leek Soup

This potato leek soup recipe has been in my family for a long time. It is so delicious and perfect for a chilly autumn or winter day (or any day). Freezes well. Feeds approximately 8-10 people as a side dish or 4-6 as a main dish.

Ingredients
  

  • 3 tbsp butter
  • 4 leeks (white part only)
  • 1 medium onion
  • 4 large potatoes – diced
  • 2 stalks celery – chopped
  • 6 large sprigs of parsley
  • 5 cups chicken stock
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp chervil
  • 1/2 tsp marjoram
  • 2 cups scalded milk

Instructions
 

  • Melt butter in large pot. Add leeks and onion and cook on medium heat, stirring frequently, for approximately 5 mins. Do not brown.
  • Add potatoes, celery, herbs, stock, salt and pepper. Cover and cook over moderate heat for 30 minutes or until vegetables are tender.
  • Blend until smooth. Bring back to a boil and stir in the hot milk.

Kitchen Witchery

I featured this potato leek soup recipe while chatting about kitchen witchery on my YouTube channel the other day.

This soup will always remind me of my mom and her kind, caring spirit.

Besides making this soup for our family, she would also make this soup for people in need. If someone was sick, or if there was a death in the family, or if someone just needed some food, this was often a soup she would make in a large batch (often doubling or tripling the recipe). This soup freezes well, which makes it perfect to gift to someone.

Potato Leek Soup – Make It Magical

As discussed in the video above, this soup holds a special place in my heart.

But if you look into the ingredients, it is obvious why this soup is so special. Even the ingredients have magical properties.

Potatoes are great for grounding work. They are connected with the earth and also wonderful to use for stablity. Potatoes are also a great comfort food – that calming, satiating energy can be worked into your kitchen spellwork.

Leeks are often used for protection. They are also a symbol of health and virtue. Leeks have an interesting history in folklore and I highly recommend looking them up and adding them to your spellwork.

Parsley is one of my mom’s secret ingredients. She loves using parsley. I love using parsley because it is a wonderful herb for protection, strength, and luck.

Marjoram is frequently used for love, happiness, and protection.
