Potato Leek Soup
This potato leek soup recipe has been in my family for a long time. It is so delicious and perfect for a chilly autumn or winter day (or any day). Freezes well. Feeds approximately 8-10 people as a side dish or 4-6 as a main dish.

- 3 tbsp butter
- 4 leeks (white part only)
- 1 medium onion
- 4 large potatoes - diced
- 2 stalks celery - chopped
- 6 large sprigs of parsley
- 5 cups chicken stock
- 2 tsp salt
- 1/4 tsp pepper
- 1 tsp chervil
- 1/2 tsp marjoram
- 2 cups scalded milk
Melt butter in large pot. Add leeks and onion and cook on medium heat, stirring frequently, for approximately 5 mins. Do not brown.
Add potatoes, celery, herbs, stock, salt and pepper. Cover and cook over moderate heat for 30 minutes or until vegetables are tender.
Blend until smooth. Bring back to a boil and stir in the hot milk.
