Banana Bread With Chocolate Chips

Banana Bread with chocolate chips – breakfast food or dessert? My kids love it as a special treat in the morning or as something sweet after dinner.

There seems to be a weird phenomenon with children where they either eat their weight in bananas or wont touch them. The pendulum and swing from one extreme to the other overnight.

One day, I cannot buy enough bananas. Other days, bananas are the worst food in the world.

Anyone else have kids like this?

Bananas are a very interesting fruit (ahem, berry). They are loaded with many vitamins and minerals such as potasium, magnesium, vitamins B6 and C.

Aside from their nutritional properties, did you know that bananas are seen as good luck?

The banana tree is a prosperous plant. While they are native to southeast Asian, they now are grown in tropical regions all around the globe. Each banana tree can produce over 200 bananas!

I will go more into the magickal properties of bananas in another post but, in short, they are great for fertility, male potency, prosperity, luck, and travel.

Banana Bread with Chocolate Chips

When we have leftover bananas that are not going to get eaten, we tend to do one of two things. We either peel and freeze the bananas for smoothies or we will make banana bread. What I choose typically depends on how many bananas I have left or if I already have an overflowing stock of frozen bananas in the freezer.

This banana bread is an easy recipe which my children love to help with.

In the batch pictures, we only added chocolate chips as we did not have any walnuts. Walnuts are a great addition to this as well but neither walnuts nor chocolate chips are truly needed for this recipe to be delicious.

This banana bread recipe does not requite any special equipment – no mixer needed. A good old wooden spoon and a mixing bowl is all you need.

Banana Bread

This banana bread recipe is a great way to use bananas that are over ripe. Add some chocolate chips to make it even more like a dessert.

Ingredients
  

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 cup sugar
  • 1/2 cup oil I use olive oil, vegetable oil or coconut oil would work too.
  • 1/2 tsp vanilla
  • 2 tbsp milk I have used dairy and non dairy milks.
  • 2-3 bananas depending on size
  • 1/2 cup chopped walnuts optional
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat oven to 325 degrees Fahrenheit.
  • Mix flour, baking soda, and salt together.
  • In a separate bowl, mix together egg, sugar, and oil.
  • Combine dry to wet – mixture will be dry.
  • Add milk, vanilla, and mashed bananas.
  • Fold in walnuts and/or chocolate chips if you wish to add them.
  • Pour into an oiled loaf pan and bake for 55-70 minutes. The loaf will be golden brown and a toothpick should come out clean.
  • Transfer to a cooling rack and let cool for at least 10 minutes before enjoying!

Freeze Your Banana Bread

Another great thing about this banana bread recipe is that it freezes really well.

My family will eat almost the entire loaf for one meal but if you only eat a portion of it, you can slice it and freezer individual portions for an easy treat in the future.

You can also make multiple loaves and freeze them whole or sliced.

I have doubled this recipe without issue but any more than that would become a difficult arm workout to mix the ingredients thoroughly.
